HALVA

Halva is a traditional Greek food, particularly popular in the Middle East and North Africa. Its popularity is expanding in Eastern Europe and Russia and to a lesser degree in the remaining Europe and the USA. Halva is consumed in these countries as a main course or dessert, with cinnamon or lemon.

It is also used as a snack for children, added in sandwiches. Halva is made of tahini (60 %) and a mixture of sugars. Thus, it contains all the ingredients of tahini at an equivalent percentage (60%), Halva is a good source of inorganic elements.

In comparison with the reference daily intake (RDA), 100 grammars of halva cover approximately 58% of the daily dietary needs for an adult man in Fe, 55% Mg, 48% P, 36%, Cu, 32%, Zn, 18%, Mn and 5% in Ca. The composition of fatty acids found in halva is similar to that of tahini. Sumptuous aminoacids (cystin and methionine), as well as tryptophan, which are usually detected in small concentrations in other vegetal proteins, are found in large quantities in halva. Experiments conducted have proven that the halva protein, not only contains all the necessary aminoacids in the desirable quantity and balance for nutrition (except for lysine), but is also particularly digestible.

 

TAHINI

 

Tahini is an oily cream extracted from the grinding of dehusked and toasted sesame. It is the main ingredient of halva and is known as a basic ingredient of many popular dishes or salads, particularly in the countries of the Middle East.

It is a natural product, produced without any additives and an ideal and complete food which reinforces good health.

 

 

SESAME OIL

Sesame oil is the oil contained almost exclusively in the sesame seed and not its husk. It is mostly composed (approximately by 85%) by monounsaturated and polyunsaturated fatty acids, approximately in equal quantities and does not contain any cholesterol or trans-unsaturated fat.

Ancient Greeks would add sesame oil as a “ conservative” to other kinds of oil, to protect it against oxidation during its storage or transfer.
